Peanut Butter and Jelly French Toast

What is ONE simple practice that seems to have one of the greatest effects of how well children do in school? It is eating breakfast. Studies have shown that students who eat breakfast show gains in math and reading and decreased rates of tardiness, absences, hyperactivity, depression and anxiety. They also enjoy better health and well being.
The key to fueling children for a day of learning is getting them to eat breakfast so find something that they like.
Mornings can be hectic so with your child make their breakfast the night before.
Here are two recipes that many children have enjoyed making and eating!!!!
PEANUT BUTTER AND JELLY FRENCH TOAST
The night before make a peanut butter and jelly sandwich. You can use whole grain bread, natural peanut butter, and an all fruit jelly. Place the sandwich in an ovenproof pan that has been sprayed with Pam or coated with melted butter. Mix with a whisk 3 eggs, 2 teaspoons vanilla, and ¾ cup of milk. (This is helping a child with measuring skills too) Pour the egg mixture (enough egg mixture for 3 sandwiches) over the bread and cover with aluminum foil. In the morning remove from refrigerator while preheating oven to 375 degrees. Bake covered for 35 minutes (Just enough time to shower and dress). That’s it!!!
